Baked Eggnog Donuts

Not sure what to do with all that left over eggnog from the holiday celebrations, or simply craving donuts?
These baked eggnog donuts are a must try. They are soft, creamy, fluffy, and topped with a delicious eggnog glaze. The best part? They are quick, easy to make, and require no yeast!

Serves: 12
Prep time: 35 minutes
Cook time: 15 minutes
Ingredients:
1½ cups eggnog, room temperature
1 stick (½ cup) unsalted butter, melted or browned
½ teaspoon nutmeg
Eggnog Glaze:
2½ cups powdered sugar
6 tbsp eggnog
¼ tsp nutmeg
¼ tsp vanilla extract or rum
¼ tsp salt
Instructions:
Preheat oven to 400F and grease donuts pans.
Brown butter and set aside to cool for 20 minutes (how to make browned butter).
In a mixing bowl, add eggnog to the cooled butter, and fold in the dry mix. Mix until combined. *Do not overmix, as it will make the donuts tough*.
Scoop batter into a pipping bag or sandwich bag. Make a hole, about an inch and a half wide. Pipe the batter into the prepared donut pans.
Pop in the oven and bake for 15 minutes.
Let cool for about 5 minutes.
Place ingredients for the glaze in a pan and cook for about 5 minutes on medium heat or until well combined and warm.
Dip donuts, one at a time in the glaze. Set on a cooling rack to cool completely.
Enjoy, with a cup of spiked eggnog!
