CocoBanana Bread

We know banana bread in its’ simplest of ways never gets old, but no one ever said we could not kick it up a notch. How about adding some coconut to really give it that Island feel and taste? Pair this with a Pineapple Coconut Rum cocktail and you will certainly feel like you are on vacation.


Serves: 10 – 12

Prep time: 8 minutes

Cook time: 50 minutes


Ingredients:

  • 1 pouch The Bake Box “Piece of Cake” Vanilla Bean Instant Cake Mix

  • 2 overripe banana

  • 1 cup unsweetened shredded coconut

  • ½ cup vegetable oil

  • ¾ cup water


Instructions:

  • Preheat oven to 350F and grease a 9"-x-13" loaf pan with cooking spray.

  • Pour dry mix in a clean mixing bowl.

  • In another bowl, mash the banana and add the oil and water. Mix until combined.

  • Pour the mashed banana mixture over the dry mix. Mix, using a spatula or wooden spoon, until just well combine.

  • Pour batter in prepared pan.

  • Bake in the oven for 50 – 52 minutes, or until toothpick inserted in the center comes out clean.
